How to Make Keshi Yena: A Traditional Curaçaoan Dish

Ingredients

For the Filling:

  • 500g (1 lb) shredded chicken (or beef, if preferred)

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 red bell pepper, chopped

  • 1 tomato, chopped

  • 2 tbsp tomato paste

  • 50g green olives, sliced

  • 2 tbsp raisins (optional)

  • 1 tsp nutmeg

  • 1 tsp black pepper

  • 1 tsp salt

  • 1 tbsp vegetable oil

  • 1 tsp thyme

For the Cheese Shell:

  • 1 large round of Edam or Gouda cheese (or thick slices to create a shell)

Optional Garnish:

  • Fresh parsley

  • Sliced olives

Instructions

1. Prepare the Filling

  1. Heat oil in a pan over medium heat.

  2. Sauté onions, garlic and bell pepper until soft.

  3. Add the shredded chicken and cook for 5 minutes.

  4. Stir in tomato, tomato paste, olives, raisins, nutmeg, black pepper, salt and thyme.

  5. Cook for another 5–7 minutes until well combined and slightly thickened.

2. Prepare the Cheese Shell

  1. Preheat your oven to 180°C (350°F).

  2. Hollow out the Edam or Gouda cheese round if using a whole round, leaving a thick shell.

  3. Alternatively, layer cheese slices in a small baking dish to create a “shell.”

3. Assemble the Keshi Yena

  1. Fill the cheese shell with the prepared chicken mixture.

  2. Cover the top with additional cheese slices or the cheese lid.

  3. Place the filled cheese in a baking dish.

4. Bake

  1. Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and golden.

  2. Remove from the oven and let it rest for 5 minutes.

5. Serve

  • Garnish with fresh parsley or sliced olives.

  • Serve hot with funchi (cornmeal porridge), rice, or a side salad.

Tips for an Authentic Keshi Yena

  • Use Edam or Gouda cheese for the best flavor and traditional texture.

  • Adjust the seasoning to your taste, some like it spicier with a hint of Scotch bonnet pepper.
