Instructions
1. Prepare the Filling

Heat oil in a pan over medium heat.

Sauté onions, garlic and bell pepper until soft.

Add the shredded chicken and cook for 5 minutes.

Stir in tomato, tomato paste, olives, raisins, nutmeg, black pepper, salt and thyme.

Cook for another 5–7 minutes until well combined and slightly thickened.
2. Prepare the Cheese Shell

Preheat your oven to 180°C (350°F).

Hollow out the Edam or Gouda cheese round if using a whole round, leaving a thick shell.

Alternatively, layer cheese slices in a small baking dish to create a “shell.”
3. Assemble the Keshi Yena

Fill the cheese shell with the prepared chicken mixture.

Cover the top with additional cheese slices or the cheese lid.

Place the filled cheese in a baking dish.
4. Bake

Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and golden.

Remove from the oven and let it rest for 5 minutes.
5. Serve
